Abstract
Bahan baku dalam proses produksi gula adalah tanaman tebu. Komoditas tebu (Saccharum officinarum L.) adalah tanaman industri yang tergolong musiman dan termasuk keluarga rumputan (Graminae). Tanaman tebu merupakan tanaman perkebunan semusim dimana di dalam batangnya terdapat suatu cairan yang memiliki rasa manis yang disebut nira. Nira inilah yang kemudian akan diolah menjadi gula. Saccharum officinarum adalah spesies tebu yang banyak digunakan untuk produksi gula, kelebihannya adalah mengandung banyak sukrosa, kandungan sabut rendah, daunnya lebih lebar, dan berbatang besar.
