Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh lama perebusan dan perendaman terhadap mutu organoleptik kerupuk teripang hitam. Penelitian ini dilakukan di Kecamatan Socah Kabupaten Bangkalan, Laboratorium Ilmu Kelautan, Laboratorium Tekhnik Industri Pertanian dan Laboratorium Dasar Fakultas Pertanian Universitas Trunojoyo Madura. Analisa yang digunakan adalah analisa organoleptik dan analisa proksimat sebagai pendukung. Rancanga yang dipakai untuk penelitian adalah Rancangan Acak Lengkap Faktorial (RALF) dan dilakukan uji lanjut (Kruskal Wallis dan Duncan).
