Abstract

Ikan teri nasi (Stolephorus spp) kering merupakan salah satu produk perikanan Indonesia. Ikan teri banyak ditangkap karena mempunyai arti penting sebagai bahan makanan yang dapat dimanfaatkan baik sebagai ikan segar maupun ikan kering.
Pengendalian mutu proses produksi ikan teri nasi di PT. Madura Prima Interna ini meliputi beberapa tahapan proses yaitu mulai dari tahap penimbangan, pencucian, perebusan, penirisan, dan pengipasan, pengeringan, sortasi,zising, pengemasan, dan penyimpanan.
