Abstract
ABSTRAK
Garam fortifikasi kelor merupakan garam yang mengalami penambahan zat gizi menggunakan ekstrak kelor sebagai bahan tambahannya. Tujuan penelitian: 1) mengetahui pengaruh suhu penyimpanan dan jenis kemasan terhadap kualitas garam fortifikasi kelor. 2) mengetahui umur simpan produk garam fortifikasi kelor dengan menggunakan pendugaan umur simpan metode Accelerated Shelf Life Testing (ASLT). Metode yang digunakan yaitu metode Accelerated Shelf Life Testing (ASLT) Model Arrhenius. Hasil penelitian menunjukkan bahwa Perbedaan suhu penyimpanan dan jenis kemasan berpengaruh nyata terhadap parameter warna uji organoleptik, vitamin A, dan vitamin C. Jenis kemasan berpengaruh nyata terhadap parameter kandungan NaCl dan uji warna (b). Umur simpan garam fortifikasi kelor menggunakan kemasan botol plastik PET suhu 60°C 16,71 bulan > kemasan botol plastik PET suhu 45°C 15,86 bulan > kemasan aluminium foil suhu 60°C 15,17 bulan > kemasan aluminium foil suhu 45°C 14,80 bulan > kemasan botol plastik PET suhu 30°C 14,30 bulan > kemasan aluminium foil suhu 30°C 13,47 bulan.
