Abstract
Pertumbuhan industri bakery/roti yang pesat telah mendorong upaya efisiensi produksi dengan cara menghemat energi dan menurunkan biaya penggunaan bahan baku. Hal tersebut membutuhkan pengetahuan yang sistematik mengenai fungsi-fungsi bahan baku dan pembantu, proses yang digunakan serta jenis dan produk yang dihasilkan. Oleh karena itu industri roti perlu menetapkan kondisi proses produksi dan memilih bahan-bahan baku yang diperlukan untuk menghasilkan roti bermutu baik, dengan biaya produksi yang ekonomis.
